Should New York's diners be open later?
Would you skip your morning workout to get fries at 2am?
Good morning everyone. Today’s letter includes:
A debate over whether “the city that never sleeps has too many diners closing at 10pm.”
Why

NEWS:
The border of Gramercy and Flatiron is heating up. Vinepair wrote an entire essay about this last week. Andrew Carmellini’s Cafe Carmellini is sexcellent (sexy and excellent) – I went a few weeks ago and saw my celebrity crush, Andrew Ross Sorkin, walking out as I was walking in. Coqodaq is in a similar area, for those who want to indulge in champagne and fried chicken. The Evelyn Hotel’s Tusk Bar was also recently taken over, with a menu from the team behind Wildair (I had never heard of this hotel before walking in for friends and family). And now the same Wildair team will be taking over Broken Shaker in the Freehand Hotel. This is fun, because it’s another partnership between Wildair’s Jeremiah Stone and Fabian von Hauske Valtierra and Authentic Hospitality’s Carlos Quirarte, Matt Kliegman, and Matthew Charles. The partnership reinforces the working relationship between the Wildair duo and Authentic: Wildair consulted on a menu for Pebble Bar, worked with the team on the food menu at the team’s Jac’s on Bond (bringing to life its signature pies), and later partnered up to develop a menu for the expansion of Ray’s to Brooklyn.
Are you a clean freak? I’m not! The New York Times is hiring a full-time writer to focus on cleaning and organizing. The annual base pay range for this role is between $87,000.00 and $105,000.00.
- launched a new show!
The genius behind Subway Takes is exploring the world of… drumroll please… longform. Well 30-minute shows instead of one-minute TikToks. THE LAST STOP was shot at WSA (duh), is sponsored by Recess, and features Jerry Saltz (my king) and Ian Fidance in the first episode. I texted Kareem last night about the new project, and this is what he said:
Emily: Why are you investing in long form?
Kareem: “To me it feels like the next logical step in the evolution of a format. I love @subwaytakes the way it is and I think that there’s room for the brand to expand. The audience loves the show, I love the show, NYC loves the show. So let’s give everyone more show. I don’t want to change @subwaytakes because I think it’s perfect but I do think it makes sense to create a longer form spinoff series like THE LAST STOP. Next up…maybe a live show? Like IRL in a big ass theater. That would be rowdy and fun. I love fun. Fun is my number one priority when it comes to business decisions. Not kidding. I love fun more than I love money but I also love money because it allows me to have fun. Thank you Recess for supporting our show :)”
Emily: You’ve invested a lot in your team. How do you decide who you work with and what do you think people’s biggest mistakes are when trying to build a team?
