This morning, Apollo Bagels opened their fourth location in New York’s Financial District. The New York bagel chain is known for a lot of things —a perfect menu (they serve plain, sesame, or everything), long lines, the same founding team as Leo Sourdough, and normal prices.
Last night, I texted founder Joey Scalabrino ahead of the downtown opening to get a sense of how he was feeling about the expansion to the new hood.
Do you anticipate a different customer at this Apollo location? If so, how are you preparing for that?
I won’t lie, I hadn’t thought much about that until today. This neighborhood is so interesting, and despite growing up in Manhattan, I haven’t spent much time here. Hopefully, we’ll see a strong early-morning Wall Street and commuter crowd right at 7 AM, plus a mix of locals and some fun tourists. We’re preparing for that rhythm by making sure we can move fast in the mornings while keeping the experience warm and welcoming throughout the day.
